Quarantine Baking: Banana Chocolate Chip Muffins

Like everyone else, I’ve found myself drawn to baking comfort food while we are stuck at home with the coronavirus quarantine. Since we’ve been at home we have made brownies, cookie topped brownies, a birthday cake for my husband, the internet famous 5 ingredient peanut butter chocolate chip cookies… and banana chocolate chip muffins.

We had a few overripe bananas, so I put out a call for recipes on my Instagram Stories. I mostly did this for Travis, because I don’t even like banana bread but he does. My bonus sister, Jaclyn, came through with a banana chocolate chip muffin recipe, so I decided to give it a try.

Ingredients to make 12 muffins:

  • 2 eggs
  • ¾ cup granulated sugar
  • 3 – 4 ripe bananas (I used 4)
  • 3 Tbsp sour cream (I didn’t have any, so I used Greek yogurt)
  • ¼ cup canola oil
  • ½ tsp vanilla extract
  • 1 ¾ cups all purpose flour
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 handful chocolate chips

Here’s what you do:

Step 1: Preheat oven to 355 degrees and use some oil on a paper towel to wipe around in your muffin pan so they don’t stick.

Step 2: Then, in a small bowl combine the flour, cinnamon, baking soda and baking powder.

Step 3: In a large bowl, combine sugar and eggs until creamy (I did this by hand and didn’t bother getting out my mixer). With a fork, mash the bananas. Add the mashed bananas, Greek yogurt, oil and vanilla to the egg mixture. Mix until combined. Add the flour mixture into the egg mixture and combine.

Step 3 1/2: Here is where I went off-script. Travis didn’t want chocolate chips in his muffins, but I obviously did. So, I poured half the recipe into the muffin pan, then I threw in a handful of chocolate chips and mixed them into the remaining mixture. When I added the extra-special-good mixture into the muffin pan, I also threw a few chocolate chips on top of each so I could tell which one was which.

Step 4: Bake in a preheated oven at 355°F for 20 minutes or until a toothpick comes out clean.

And… they are DELICIOUS!

Oh my gosh, I don’t even LIKE banana bread, but these banana chocolate chip muffins are so incredibly moist and chocolaty and yummy. In fact, I bought some extra bananas last week so that I can let them get overripe just to give me an excuse to make these muffins again!

Home Chef: 1 Year Check-In

We typically stick with a 2-person serving size, but if I know it’s something Jack will also love I’ll bump it up to 4-servings and have leftovers. However, many times the 2-serving portion totally stretches enough to include our 2nd grader too (so keep that in mind if there are smaller kids in the house).

Let’s take a look at one of my upcoming orders:

Here are the three meals I picked to be delivered on December 17th:

  • Sweet and Spicy Coconut Mahi-Mahi with charred baby box choy and pineapple rice
  • Roasted Red Pepper Steak Linguine with spinach and Parmesan
  • Shrimp Bruschetta Risotto with Asiago and grape tomatoes

Pretty impressive, right?! I could have added meals, protein packs of meat, salads for lunch, or even a smoothie!

Do You Have a Favorite Overnight Oatmeal Recipe?

I’ve been trying to start my day better with a healthy and filling breakfast and I need some ideas! Usually in the summer, I tend to do a protein shake because I like the cold milkshake kinda thing when it’s a hot day. However, now that the weather is getting cooler, I’m craving warm stick-to-you-ribs type of food.

On weekends I like to make eggs and a bagel, or a ham, egg and cheese bagel sandwich, but I need something that I can take with me on workdays.

Which brings me to oatmeal.

Instant oatmeal is just kind of blegh. The instant brown sugar cinnamon kind is yummy, but full of sugar and not very good for you. I’ve tried other *less sugary* packets and they just turn into a tasteless mush that I have to force myself to eat.

In my imagination I want to make something over the weekend and put it into single serving containers for me to grab and take to work each morning.

There are certainly hundreds of make-ahead oatmeal recipes out there on the internet, but I wanted to see if you all had some you actually REALLY like. Maybe something with oatmeal in the crockpot? Perhaps with some bananas or maple syrup or something?
