I’ve been trying to start my day better with a healthy and filling breakfast and I need some ideas! Usually in the summer, I tend to do a protein shake because I like the cold milkshake kinda thing when it’s a hot day. However, now that the weather is getting cooler, I’m craving warm stick-to-you-ribs type of food.
On weekends I like to make eggs and a bagel, or a ham, egg and cheese bagel sandwich, but I need something that I can take with me on workdays.
Which brings me to oatmeal.
Instant oatmeal is just kind of blegh. The instant brown sugar cinnamon kind is yummy, but full of sugar and not very good for you. I’ve tried other *less sugary* packets and they just turn into a tasteless mush that I have to force myself to eat.
In my imagination I want to make something over the weekend and put it into single serving containers for me to grab and take to work each morning.
There are certainly hundreds of make-ahead oatmeal recipes out there on the internet, but I wanted to see if you all had some you actually REALLY like. Maybe something with oatmeal in the crockpot? Perhaps with some bananas or maple syrup or something?

My sister made steel cut oats when I was there. Really good! I saw a recipe where you make oatmeal, layer it with any small fruit a few times, and chopped nuts on top.I think you could add yogurt under the nuts, or a caramel drizzle. But you don’t want to add too much, if you are trying to stay away from a lot of extra sugar.
A little smoked salmon on a bagel is healthier than a lot of other things, and it is so good. You don’t need much, and it isn’t that expensive. Yum!
I’m not such a fan of overnight oats. Sorry.
But I do like doing muffins to grab throughout the week. I also have tried to rethink my idea of breakfast because the list of traditional breakfast foods is just not nutritious enough. My new thing is to eat one or two of these (https://pinchofyum.com/pumpkin-energy-bites)with my coffee and then at 10am have my breakfast. Sometimes I do a turkey sandwich for or fried rice or even leftovers from dinner.
